Golden Ugali with Sukuma Wiki & Fried Eggs

Ingredients

For the Ugali:

  • 3 cups Wingi Maize Flour

  • 4 cups water

  • A pinch of salt

For the Sukuma Wiki:

  • 1 bunch sukuma wiki (collard greens), finely chopped

  • 1 onion, diced

  • 2 tomatoes, chopped

  • 2 tbsp cooking oil

  • Salt to taste

For the Eggs:

  • 3–4 eggs

  • 1 tbsp cooking oil

  • Pinch of salt and black pepper (optional)

Instructions

  1. Prepare the Ugali

    • Bring water and a pinch of salt to a boil in a sufuria.

    • Gradually add Wingi Maize Flour while stirring continuously with a mwiko.

    • Keep mixing until the ugali thickens and pulls away from the sides of the sufuria.

    • Lower the heat, cover, and let it steam for 5 minutes.

    • Shape and serve hot.

  2. Cook the Sukuma Wiki

    • In a pan, heat oil and fry onions until soft.

    • Add tomatoes and cook until tender.

    • Stir in sukuma wiki and cook for 3–4 minutes.

    • Season with salt and set aside.

  3. Fry the Eggs

    • Heat oil in a small pan, break in the eggs, and fry until the whites are set.

    • Sprinkle with salt and pepper if desired.

  4. Serve

    • Plate the ugali, top with sukuma wiki, and add a fried egg on the side.

    • Enjoy while warm!

Tips & Serving Suggestions

  • Add a squeeze of lemon to your sukuma for a fresh tang.

  • For a heartier meal, swap fried eggs for boiled ones or pair with beef stew.

  • Use hot water when mixing ugali for a smoother texture.
