Ingredients
For the Ugali:

3 cups Wingi Maize Flour
-
4 cups water
-
A pinch of salt
For the Sukuma Wiki:

1 bunch sukuma wiki (collard greens), finely chopped
-
1 onion, diced
-
2 tomatoes, chopped
-
2 tbsp cooking oil
-
Salt to taste
For the Eggs:
-
3–4 eggs
-
1 tbsp cooking oil
-
Pinch of salt and black pepper (optional)
Instructions

Prepare the Ugali
-
Bring water and a pinch of salt to a boil in a sufuria.

Gradually add Wingi Maize Flour while stirring continuously with a mwiko.

Keep mixing until the ugali thickens and pulls away from the sides of the sufuria.

Lower the heat, cover, and let it steam for 5 minutes.

Shape and serve hot.

Cook the Sukuma Wiki
-
In a pan, heat oil and fry onions until soft.
-
Add tomatoes and cook until tender.
-
Stir in sukuma wiki and cook for 3–4 minutes.

Season with salt and set aside.

Fry the Eggs
-
Heat oil in a small pan, break in the eggs, and fry until the whites are set.

Sprinkle with salt and pepper if desired.

Serve

Plate the ugali, top with sukuma wiki, and add a fried egg on the side.
